Zucchini butter

2 lb zucchini, coarsely grated

                1) Let grated zucchini drain in colander for 3 minutes or more.

¼ c olive oil

2 shallots or garlic cloves or both, minced

2) Saute shallots/garlic in oil for 1 minute.

3) Add zucchini. Cook, stirring occasionally, over medium-low heat for 20 minutes or until caramelized. Salt & pepper to taste. Serve with toast.
