Minestrone

2 tsp oil

1 c onion

  1. Saute onion in oil for 3 minutes.

2 tsp chopped fresh oregano

4 garlic, minced

  1. Add above to onion; saute 1 minute.

3 c potato, cubed small

1 c carrots, chopped

2 c green beans, chopped

1 c (2 ears) fresh corn

  1. Add above to pot; saute 5 minutes.

4 c tomatoes, chopped

3 cans of 14 oz chicken broth

  1. Puree 3 cups of tomatoes with one can of broth. Add to pot with remaining tomatoes and broth. Simmer 20 minutes.

½ c Ditalini pasta

15 oz Great Northern beans (cooked)

½ tsp pepper

Add above to pot. Simmer 10 minutes.
